All the way to the Hawkesbury. North through the city, up through Berowra, and a long descent into Brooklyn — the bridge over the river is the turnaround point. The climb back out of Brooklyn is the steepest sustained climb of any MC route, but it's short.
Coffee at the Estuary Cafe by the water before the return. 130km is a real day — pack two bottles and food, and don't expect to be home before lunch.
